We carefully select fresh, organic ingredients for every dish! Behind Troimerei, you’ll find our private 300-tsubo farm. The chef personally oversees everything from raising seedlings to cultivation. Using safe, pesticide-free natural farming methods and only minimal organic fertilizer, we bring out the vegetables’ true flavors. We harvest just before cooking for exceptional freshness—so delicious that even we are amazed. Long before “slow food” and “LOHAS” became popular terms, we have remained committed to a natural approach—from ingredients to preparation. Our meats and salt are imported directly from France, and live lobster is imported directly from Canada. With carefully chosen, fresh, and trustworthy ingredients throughout, we offer a truly blissful dining experience.

    Made with stock carefully extracted from the head, this “live lobster” specialty has absolutely no fishy odor—just a richly concentrated sauce full of deep umami.

    What makes Troimerei’s lobster different!

    When shrimp or crab are transported alive, the meat inside the shell can shrink.
    To prevent this, we stop their activity in near-hibernation by keeping them in seawater chilled to around 0°C, then have them air-freighted directly from Canada—whose cold seas resemble those of northern France.

    They remain alive until just before cooking, so you can enjoy truly fresh lobster.

    - Both dinner and breakfast were as delicious as everyone said. Especially at dinner, we took our time savoring each dish with great wine. The lobster in particular was outstanding.

    - For the past few years we’ve visited almost every year for excellent French cuisine. The chef has changed a few times and some items like appetizers have evolved little by little, but the fresh lobster dish is always exactly what we hope for—simply superb.
