We carefully select fresh, organic ingredients for every dish! Behind Troimerei, you’ll find our private 300-tsubo farm. The chef personally oversees everything from raising seedlings to cultivation. Using safe, pesticide-free natural farming methods and only minimal organic fertilizer, we bring out the vegetables’ true flavors. We harvest just before cooking for exceptional freshness—so delicious that even we are amazed. Long before “slow food” and “LOHAS” became popular terms, we have remained committed to a natural approach—from ingredients to preparation. Our meats and salt are imported directly from France, and live lobster is imported directly from Canada. With carefully chosen, fresh, and trustworthy ingredients throughout, we offer a truly blissful dining experience.

    Made with stock carefully extracted from the head, this “live lobster” specialty offers a richly concentrated sauce with deep umami and absolutely no off-odors—please enjoy every bite.

    What makes Troimerei’s lobster different!

    When shrimp or crab are transported alive, the meat inside the shell can shrink.
    To prevent this, we place them in seawater chilled to around 0°C to halt activity in a hibernation-like state. They are then air-freighted directly from Canada’s cold waters—similar to those of northern France.

    They remain alive right up until just before cooking, so you can savor truly fresh lobster.

    - Both dinner and breakfast were as delicious as everyone says. For dinner especially, we took our time enjoying each dish with wonderful wine. The lobster was outstanding.

    - For the past few years, we’ve visited almost every year when we’re craving great French cuisine. The chef has changed a few times and the appetizers have evolved little by little, but the fresh lobster dish is always exactly what we hope for—absolutely superb.

    Our Commitment to Dinner Cuisine

    Dinner is prepared by a French chef who previously served as a chef pâtissier at a two-Michelin-star French restaurant in Oxford, UK. He does not offer lunch service, dedicating his mornings entirely to preparing your evening meal.

    Even before his appointment, we steadily pursued excellence—sending multiple Japanese chefs to France for training and inviting the late Mr. Patrick Paugès, owner and head chef of a one-Michelin-star restaurant in southern France and one of the few Master Sommeliers in France, all the way to Hakuba.

    At that time, we air-freighted most ingredients from France whenever possible. Just before returning home, Mr. Paugès praised our work, saying that if we were in France we could aim for a Michelin star—then reminded us that “French cuisine has another important mission.”

    He left us with these words: “Another mission of French cuisine is to discover and develop local ingredients,” and returned to France.

    Since then, guided by this invaluable lesson, we have continued our sincere efforts to create a delicious harmony between organic vegetables grown by our chef in our own garden and the rich seasonal produce of Shinshu, together with high-quality ingredients from France.
