Aperitif: Umeshu (plum wine)
Appetizers: Prawn with roe, simmered abalone, fig, edamame, local chicken grilled with moromi miso
Soup: Hairtail in a clear Shimizu-style broth, yuba tofu skin, yuzu zest
Sashimi: Tuna, bonito, hairtail, horse mackerel
Grilled Dish: Tokugawa tribute Orido eggplant dengaku (miso-glazed)
Simmered Dish: Ebi-imo taro, winter melon, and simmered octopus assortment
Vinegared Dish: Crab and cucumber roll, jellyfish, egg-yolk vinegar sauce
Rice Course: Kinpira; steamed rice
Miso Soup & Pickles: Red miso soup; assorted pickles
Fresh Fruit: Melon; watermelon; peach
Dessert: Milk kanten jelly; gyuhi (soft mochi); apricot

This month’s menu features seasonal hairtail served both in our clear Shimizu-style soup and as sashimi—an opportunity to savor seafood at its best during this time of year.
