About Our Allergy Accommodations
If you would like changes to your meals due to food allergies or religious reasons, please consult us in advance at the time of your Reservation. We will accommodate within what we can provide. Menu details will be left to the Accommodation.
Please inform us no later than 3 days before your stay. Requests made shortly before arrival may not be accommodated, or may incur an additional fee.
For allergy requests, we will accommodate as much as possible for the 8 specified allergens and also for the 20 items equivalent to specified allergens.
<8 specified allergens: egg, milk, wheat, shrimp, crab, buckwheat, peanuts, walnuts>
<20 items equivalent to specified allergens: salmon roe, mackerel, salmon, squid, abalone, kiwi fruit, banana, peach (including nectarines), apple (including cashew apples), orange (including mandarins), yam (including Japanese yam), matsutake mushroom (including pine mushrooms), soybeans (including soybean products), almonds (including almond products), cashew nuts (excluding cashew apples), sesame seeds and sesame products including tahini and sesame oil; gelatin; beef; pork; chicken>
We do not accept requests to change meals due to personal dislikes.
As our standard menu is kaiseki cuisine and often uses seafood-based stock/dashi ingredients that may be mixed into dishes during preparation. If you cannot consume any trace of seafood in stock/dashi due to allergies then we may have no choice but refuse meal service.
Please note that we do not have dedicated staff or a separate kitchen area/equipment exclusively for allergy-friendly cooking. We use standard cleaning methods for cookware and utensils so we cannot completely remove all traces of ingredients including minute amounts of allergenic substances.
Frying oil is shared among various ingredients and cannot be separated.
We do not accept requests regarding portion size seasoning or changes/removal of condiments/seasonings.
For guests with severe allergies our top priority is safety so we may unfortunately refuse meal service if our head chef determines it is difficult to accommodate or if notice is given too close to the stay date.
*You are welcome bring your own safe foods such as retort pouch meals or frozen foods. Please inform us in advance. We can assist with heating such as using a microwave oven or warming in hot water bath.*
