An adults-only Accommodation where you can savor carefully selected Hokkaido ingredients and enjoy Jozankei’s seasonal scenery throughout the year.

“Chu” refers to both the place where food is prepared and the chefs themselves. “Chu Suizan” is an Accommodation where our chefs welcome you into our kitchen. Above all, we want you to enjoy eating and savoring every bite. We hope you will treasure the incomparable joy of sharing delicious food and laughter with someone special. The finest seasonal ingredients arrive from all across Hokkaido. Dashi drawn from pure spring water. And a deep commitment to salt—the key that brings flavor together. Neither purely Japanese nor purely Western. Seamless cuisine without borders. While experiencing everything “food” has to offer here, we deliver surprise and inspiration through eating and savoring— that is what “Chu Suizan” strives to be.

  • I have stayed here about three times so far, and each time I was in a different Room with its own unique atmosphere—every Room is wonderful. When it comes to Chusuizan, the cuisine is the highlight. Each visit, I was thoroughly satisfied with the creative dishes made with seasonal ingredients. The lounge also offers an excellent variety of items.

  • My husband, daughter, and I travel to Hokkaido every year, and this time we visited Jozankei Onsen for the first time. We had imagined it as an Onsen area popular with large tour groups, but this Ryokan was run by a small team and their service was outstanding. It was the first time in a while that we truly enjoyed both our stay and delicious meals at a Ryokan. Not only the Japanese staff but also the international staff were highly professional in the way they spoke and in their knowledge of the cuisine (ingredients, cooking methods, etc.), and you could clearly see how diligently they are always learning. The lounge on the second floor offered light snacks, late-night bites, and tasty drinks throughout the day, which we enjoyed after bathing. The three of us stayed in a Japanese-Western style Room. We have a few minor comments about how the Room is partitioned and that there is no screen on the open-air bath window, but the free-flowing hot spring water from the source was excellent. We didn’t know there was such a Ryokan in Jozankei Onsen where individual travelers could enjoy themselves so much.We would love to visit again in another season.
