- Yamanaka Onsen Kocho
A daily limit of just seven parties—seasonal Kaga flavors, crafted by our chef’s hands.
Travel through time and drift into a dream. Yamanaka Onsen Kochou is a culinary Accommodation where you come to savor the craftsmanship of our chefs. Our head chef, who refines Kaga kaiseki with a spirit passed down from master to disciple, and a young chef who weaves in French techniques. Each course created by their sensibilities is served by our staff together with the day’s story. Seafood from Noto, seasonal blessings nurtured in Kaga’s mountain villages, Kutani ware tableware, and Yamanaka Onsen with 1,300 years of history. The culture rooted in this land and the colors of the four seasons leave an even deeper impression on a single night’s creation. A quiet retreat limited to just seven parties per day—within reach of the chefs’ hands. Surrender yourself to Kaga’s seasonal flavors and artisanal craft, and spend an evening as the boundary between dream and reality gently melts away.
This is a small Ryokan with a strong sense of history, and as soon as you step through the entrance, you are welcomed by a classic Japanese Ryokan that blends beautifully with nature. The attentive service from the staff and the view of Kakusenkei Gorge from the Room made for a wonderful welcome. The Onsen is also small, but it was calm and very relaxing. Most impressive of all was the dining experience—every detail, from the food to the presentation and tableware, was outstanding. This is an Accommodation I would definitely like to return to.

Introduction of the Accommodation

At Kochou, what we value above all is the craftsmanship of our chefs. Our head chef refines Kaga kaiseki with a spirit of tradition, while a young chef weaves in French techniques. Each dish shaped by their sensibilities is presented by our staff together with the day’s story. More than simply tasting the food, we hope you will feel the intentions behind it and the changing seasons. This is Kochou’s vision of hospitality—one that is woven through cuisine.

Each Kocho guest room offers a distinct Japanese-style ambiance. From rooms with private open-air baths to sukiya-style detached villas, every room features its own unique design and furnishings. Savor the cuisine, unwind in the hot springs, and then settle into a quiet moment of stillness—this lingering afterglow is the essence of the journey Kocho hopes to share with you.

Yamanaka Onsen boasts a 1,300-year history. Surrender to its gentle waters and enjoy a soothing time that slowly heals both body and mind. Soak in the Onsen, savor exquisite cuisine, and quietly relish the lingering calm of the night. At Kochou, we offer a fulfilling stay where fine dining and restorative baths come together.

This early Showa-era shoin-zukuri building carries a timeless charm that only comes with age. The warmth of wood, delicate details, and a quietly flowing atmosphere come together to gently embrace every guest. While preserving its history, the space is still carefully maintained today—please enjoy Kaga’s distinctive character and a peaceful stay. In addition to overnight stays, it is also used for important occasions such as family meetings and engagement ceremonies.

Kutani ware tableware does more than complement the cuisine—it completes each dish with beauty. The vibrant colors and delicate designs of this traditional Kaga craft enhance the flavors of the season even further. Both the cuisine and the vessels are part of Kaga’s culture. Through each plate, savor the unique aesthetic sensibility of this land.

Kochou’s cuisine is nurtured by the climate and culture of Kaga. From Noto’s seafood and Kaga vegetables to seasonal mountain harvests, we carefully select the finest ingredients at their peak and prepare each dish with care, honoring their natural flavors. Savor the seasons and terroir of Kaga—unique tastes that can only be found here—through every plate.

Rooted in the time-honored tradition of Kaga kaiseki, we layer the finest seasonal ingredients of the day with the chef’s sensibility. By blending inherited techniques with fresh ideas, we elevate them into a one-night-only creative kaiseki. Savor dishes that can be enjoyed only here, alongside ingredients nurtured by Kaga’s climate and culture.

In addition to the authentic charm of Kaga kaiseki, we also offer a special course that incorporates French techniques and sensibilities. Rooted in tradition and enriched with fresh inspiration, each dish is crafted with meticulous care. Enjoy our signature Kaga-French cuisine—where Japanese and Western flavors harmonize—created exclusively at Kochou.
