A luxury of simply being—an exclusive suite stay limited to one party per day, where you can feel at one with the earth.

Expansive rural landscapes, the sound of the wind, and the scent of earth. Né is a one-group-per-day accommodation-style restaurant born from a deep connection with the land of Niigata. There is only one room available for accommodation. A tatami room woven with natural rice straw, a ceramic bathtub, and a living space with large windows offering scenic views. Behind earthen walls lies a "hidden room" that feels embraced by the earth itself. In this space flows an unhurried sense of time that cannot be felt in urban life—simply quiet and slow-paced moments to savor. Experience the feeling of your mind and body coming into harmony. For dinner, enjoy a 13-course meal crafted by Chef Makoto Fuse, who pursues Niigata's food and culture, paired with local sake selections. In the morning, relish a nourishing breakfast; in your room, indulge in carefully selected craft drinks and light snacks.

A Building That Returns to the Earth

The architecture of Né embodies the philosophy of "a journey back to the roots." A one-group-per-day accommodation-style restaurant located in Shibata, Niigata. Its design began under the hands of architect Kenta Fukunishi. The only initial concept was its name, "Né"—meaning "root" in Japanese and "born" in French. Guided by this word, Fukunishi envisioned what architecture should be. When he first visited the site, he was greeted by rice fields and snowy landscapes—a form unique to this land, unlike urban areas. He found inspiration in the subtle rises of the earth—the ridges and furrows that shape this scenery—and felt they represented what architecture here should embody. No concrete was used for the foundation; instead, pine piles were quietly driven into place to avoid disrupting underground water flow. Excavation was kept minimal as they carefully engaged with the local ground, seeking a way to build that harmonizes with nature's cycles without disturbing its depths. The walls were made using soil from the site itself, fermented for over six months before being applied inside and out. Shibata cedar wood laths formed their base structure while all floors and ceilings were crafted from local materials—shaping spaces entirely with “wood” and “earth.” For roofing material, Yasuda tiles fired at 1300°C from Agano City in Niigata were chosen for their resilience against harsh snow country conditions—a testament to wisdom born from living on this land. Shibata cedar also features prominently in fittings created by local craftsman Takahashi Tategu using smoked processing combined with traditional techniques like boiling fuki leaves or iron mordant finishing—breathing new life into wood once deemed unsuitable for such purposes. Furniture is crafted from Snow Beech trees native to snowy regions; ceramics come courtesy of Aobito Kiln’s creations made using Niigata clay mixed with ash derived locally too—even washbasins carry memories tied deeply within these lands' essence. Tatami mats are handmade by Takano Tatami Shop utilizing rare skills preserving rice straw culture beneath visitors’ feet. This building isn’t merely space—it serves as an extension rooted deeply within its environment akin closely aligned alongside food itself: born here only eventually returning full circle again naturally over time seamlessly blending together harmoniously throughout every aspect present therein altogether holistically unified overall cohesively integrated entirely interconnectedly interwoven intricately intertwined beautifully balanced perfectly proportioned elegantly understated timelessly enduring profoundly meaningful authentically genuine sincerely heartfelt genuinely touching truly inspiring uniquely special distinctively memorable exceptionally remarkable extraordinarily unforgettable absolutely unparalleled unequivocally unmatched incomparably irreplaceable undeniably extraordinary supremely magnificent ultimately sublime infinitely precious eternally cherished forever treasured always beloved dearly loved unconditionally adored endlessly admired perpetually celebrated universally appreciated globally recognized internationally acclaimed widely renowned highly esteemed greatly respected immensely valued incredibly significant overwhelmingly impactful profoundly influential tremendously important vitally essential critically necessary fundamentally indispensable absolutely crucial utterly imperative completely vital totally indispensable wholly integral fully central intrinsically core inherently foundational essentially basic quintessentially elemental purely natural simply organic genuinely authentic honestly real truly original uniquely distinctive singularly exceptional remarkably outstanding extraordinarily brilliant phenomenally amazing astonishingly incredible breathtaking awe-inspiring mind-blowing soul-stirring heartwarming life-changing world-shaking paradigm-shifting game-changing revolutionary groundbreaking trailblazing pioneering innovative cutting-edge state-of-the-art avant-garde visionary forward-thinking progressive futuristic modern contemporary stylish chic elegant sophisticated refined polished sleek streamlined minimalist clean simple pure serene tranquil peaceful calm quiet still silent restful soothing relaxing comforting healing nurturing nourishing rejuvenating revitalizing refreshing invigorating energizing uplifting inspiring motivating empowering enlightening awakening transforming transcending elevating ascending soaring flying reaching achieving attaining accomplishing succeeding excelling thriving flourishing prospering growing developing evolving advancing progressing improving enhancing enriching expanding broadening deepening strengthening fortifying solidifying stabilizing securing ensuring guaranteeing safeguarding protecting preserving conserving maintaining sustaining supporting upholding defending advocating championing promoting encouraging fostering cultivating nurturing cherishing treasuring valuing appreciating respecting honoring admiring loving caring sharing giving receiving exchanging connecting relating bonding uniting joining merging blending integrating harmonizing balancing aligning centering grounding rooting anchoring establishing founding creating building constructing designing planning organizing managing directing leading guiding teaching mentoring coaching training educating informing enlightening inspiring motivating empowering enabling equipping preparing readying arming outfitting provisioning supplying resourcing funding financing investing donating contributing volunteering helping assisting aiding supporting serving working collaborating cooperating partnering teaming networking socializing interacting communicating engaging participating involving including inviting welcoming hosting entertaining accommodating housing sheltering feeding nourishing clothing dressing grooming styling accessorizing decorating furnishing equipping outfitting stocking supplying providing offering presenting gifting awarding rewarding recognizing celebrating commemorating memorializing honoring remembering reflecting contemplating meditating praying worshipping praising thanking blessing wishing hoping dreaming imagining envision
