Original Japanese Sake
Human hands and time, the blessings of the land, and heartfelt intention slowly came together to create this single drop.
Using Omachi sake rice grown in the rice fields of Kuramae, we brew with pristine water drawn from 150 meters underground—water that has flowed for years through volcanic rock in the Yabakei formation, with the Hikosan mountain range as its watershed. First, that water is channeled into the paddies to grow the rice; later, sake is brewed using the very same water.
Water born in the forest nurtures rice, becomes sake, and returns to people. This “cycle of water” is the special story held within this sake.
Brewing is entrusted to Inoue Shuzo in Hita City, Oita Prefecture—a brewery with more than 200 years of history. Dedicated to working in harmony with nature, they cultivate their own sake rice and insist on winter brewing. By fermenting slowly at low temperatures, they carefully draw out sake’s delicate aroma and deep umami. Hand-pressed at the final stage, it offers a crystal-clear purity and a generous finish unique to Omachi—often called a “phantom” sake rice.
The staff of ANA InterContinental Beppu Resort & Spa visited the brewery time and again—standing in the paddies feeling the same breeze, stepping into the kura (brewery) and tracing the flow of water. Through conversation and shared seasons, our hopes for this sake were also gently brewed over time.
Beppu is a land where forest-held waters emerge as Onsen after many years—and here too, this rich “cycle of water” soothes people and sustains life. The Hotel concept “Beyond the Forest” expresses a world beyond those woods where nature and people live in harmony—and its limitless possibilities. Because it resonates deeply with this sake’s story, this project began.
