Our staff is dedicated to helping you create wonderful memories. Nestled in the serene Kurumayama Highlands of Shinshu, Auberge La Meije takes pride in its "Seasonal French Cuisine," crafted with organic vegetables grown by our dedicated in-house farmers. The concept behind our "Seasonal French Cuisine" is a commitment to using the finest ingredients. We focus on French dishes that allow our guests to savor the fresh and safe produce cultivated in the foothills of the Yatsugatake Mountains.

Seasonal French Cuisine

In spring, enjoy wild mountain vegetables; in summer, freshly picked seasonal produce; in autumn, wild mushrooms nurtured by the mountains; and in winter, hearty root vegetables. All year round, savor smoked delicacies crafted with the highland breeze. At Auberge La Meije, our French cuisine lets vegetables take center stage. The vegetables we serve are grown exclusively for us by dedicated farmers. Currently, three farms cultivate their specialty crops organically. The autumn mushrooms we offer are all wild-harvested. Our expert staff collects them from elevations above 1,500 meters on the slopes of Yatsugatake Mountain Range.

Mirepoix refers to aromatic vegetables. At Auberge La Meije, we prepare various stocks and broths, but "Court Bouillon" is essential for "French Seasonal Vegetables." This broth is made solely from mirepoix, concentrating the aroma, sweetness, and ultimate umami of vegetables.

The smoked dishes at Auberge La Meij are among the ingredients that many people enjoy. From autumn to early spring, when humidity and temperature are low, items such as prosciutto, bacon, salmon, and rainbow trout are prepared. The drying process is naturally conducted outdoors using the wind. Prosciutto is smoked and air-dried repeatedly for two months to achieve maturation. The subtly incorporated smoked ingredients in the dishes are a proud specialty of La Meij.

From the Room, you can enjoy views of the Yatsugatake mountain range throughout the seasons. In winter, the range is blanketed in white snow, in spring, our garden blooms with orange azaleas, and in July, the Nikko Kisuge flowers begin to blossom.
