This is a seasonal hot pot course served at the private-room-style hot pot dining venue “Iiso,” where you can enjoy seasonal nabe and a great selection of drinks. Featuring Awaji Island’s signature flavors and the finest ingredients of each season, the course changes throughout the year. This spring, we present a nabe kaiseki centered on Sakura Sea Bream shabu-shabu, showcasing Awaji Island’s best spring delicacy: Sakura Sea Bream. Spring sea bream is called “Sakura Sea Bream” because, before spawning, its scales turn a vivid pink reminiscent of cherry blossom petals. While sea bream is delicious year-round (except right after spawning), this Sakura Sea Bream season is considered its peak. Please enjoy to your heart’s content the firm texture, subtle sweetness, and deep umami of Sakura Sea Bream.
