We finished everything.
There were Takatsudo momiji manju in the Room, and they were pleasantly chewy and delicious, so I took a walk to Takatsudo’s main shop the next day. I was surprised by how many varieties of momiji manju they had. This Hotel is known for its excellent meals, and they truly lived up to the reputation—I enjoyed everything and finished it all. The staff member who served our meal provided great explanations and attentive service. Dinner consisted of 11 carefully prepared dishes, all of which were delicious. They also kindly explained in advance that any leftover rice could be made into onigiri, which I enjoyed later as a tasty late-night snack. For breakfast as well, I asked to have the remaining rice made into onigiri. It was a simple salted rice ball made with local rice and salt only, but it was exceptionally good. After checkout, I left my luggage at the Hotel and went for a walk nearby. When I returned, they drove me to JR Miyajimaguchi Station. Thank you very much for your hospitality. It was a Hotel filled with warm and kind staff members.

The food service was slow.
Because the Hotel uses open pricing, the overall value for money—including the rate—was excellent. However, perhaps because it has only recently opened, I felt there is still room for improvement in staff service. The Hotel itself is very good, so I’m sharing this in the hope that it will continue to improve. First, explanations were insufficient, and it seemed some staff were not fully familiar with the details. Not being escorted to the Room is fine, but some Facility features were hard to understand. I think things would improve significantly if guests were given a simple sheet summarizing how to use the Room and key amenities. Dinner was delicious and reflected the chef’s attention to detail. On the other hand, breakfast was disappointing: even though I arrived at my Reservation time, it took nearly 30 minutes to be served. Other guests were also waiting, and in some cases people who arrived later were served first; being left unaddressed like that needs improvement. There also seemed to be operational issues—for example, after-meal drinks were brought out before any food had been served. I believe a Hotel should avoid making guests wait more than 10 minutes for breakfast service, so I hope this improves going forward. Also, I would appreciate having shampoo and conditioner available in the sauna area.

It doesn’t feel like it’s intended for Japanese guests.
Because I was traveling with overseas guests, I chose this Hotel expecting a high level of quality, but my first impression was negative from the start. Check-in was not handled face-to-face; I was told to enter my Reservation Number. For a Hotel that is not inexpensive, this kind of process was surprising to me. Because of presbyopia, I had trouble entering the Reservation Number and made a mistake. Only then did staff ask, “Shall we enter it for you?” I would have appreciated that support from the beginning. I was escorted to the elevator, and staff pointed at the restaurant next to it. When I asked, “Is this the restaurant for dinner?” they immediately replied, “Your Plan does not include dinner.” However, I had reserved a Plan with dinner included, which left me feeling very uncomfortable. When I asked where to find swimsuits for the Onsen, I was told they were “right after you enter.” But they were not there. I considered calling the front desk, but there was no information posted anywhere, so I went back down to ask again. Then I was told they were located near “the Onsen entrance.” That lack of clear guidance is your mistake. The champagne served at dinner had gone flat and was poured without any confirmation. While pouring it—when almost no bubbles appeared—did no one think anything was wrong? It felt insulting. When I pointed it out afterward, I was told, “We apologize as we have just opened and are still inexperienced,” but that has nothing to do with me. Isn’t it your responsibility as professionals to be properly prepared before opening? My guest liked the Room pajamas and wanted to purchase them. When we asked where they could be bought, we were told you would look into it and let us know by the next morning—but we never received any information. I will not return and cannot recommend this Hotel to anyone. It is very disappointing that it did not provide value commensurate with its price.

I originally made a Reservation with the breakfast Plan. Later, I heard that the dinner here has an excellent reputation, so after arriving I asked to add dinner at short notice. (Sorry for the inconvenience.) The rumors were true—my expectations were not disappointed. We sat at the counter in the restaurant and enjoyed the live kitchen. Watching the chef light the charcoal raised our anticipation even more. Each creative dish came with an explanation of the ingredients, and everything was truly delicious. The tableware used for plating also showed great attention to detail, making it a feast for both the eyes and the palate. Not only was the food outstanding, but so was the chef’s personality. The Japanese set breakfast had gentle, breakfast-appropriate seasoning—perfect for starting the day. The Hotel interior felt like an art museum, and its calm atmosphere was very soothing. The Room we stayed in was clean and refreshing with a white-based design, and we were able to spend our time comfortably. It’s also close to the ferry terminal for Miyajima, which made getting around convenient. Finally, thank you to all staff who assisted us and to the chef as well. The meal was incredible—thank you! We will definitely visit again.

The insanely cool Hotel I’ve been wanting to stay at in Japan!!
A Hotel that feels like staying in an art museum, with the worldview of architect Fumihiko Sano present throughout. Surrounded by contemporary, edgy art and works by local artists, the space itself becomes an experience. Dinner is a wood-fired course featuring local ingredients. The bold flavors of the produce and the skillful use of fire were especially memorable, making it a highlight of the stay. We chose a Japanese breakfast, and its quality was so high it could be a reason to book on its own. The rooftop spa requires swimwear. Enjoying the sauna, Onsen, and open-air bath while taking in views of Miyajima was exceptional—a special experience that left both body and mind refreshed. The guest rooms feature a minimalist Japanese-modern design. While avoiding excessive decoration, they offer ample comfort for quiet relaxation, beautifully balancing the entire stay.

The people were warm and welcoming, and it was a great experience.
I stayed here less than a month after it opened. Near the entrance were many congratulatory flower arrangements. The staff mentioned that there used to be even more, but the number has decreased over time. From the phone call before arrival to the Shuttle Service, the interior of the Hotel, the meals, and even until I left, every staff member was consistently pleasant and welcoming, making it a wonderful start to my trip. I’m truly grateful. The Room felt even more comfortable than in the photos, and I decided to stay longer than originally planned when I was supposed to leave early in the morning. The wide hallway leading to the bathroom and toilet also made it easy to relax as if it were my own home. Art is displayed throughout from the entrance onward, and above all, the cuisine is outstanding. The chef was friendly as well—truly impressive. The bath Facility seemed simple at first, but there is a spa on an upper floor, so it felt more than sufficient. I was also happy with the uka amenities. Overall, it isn’t inexpensive, but considering that meals are included and given the excellent hospitality, it was an exceptional experience. I would love to visit again.

As the Hotel’s name suggests, the food is excellent.
True to its intriguing name, “Fork & Knife,” I felt this Hotel places a strong emphasis on dining. It’s like innovative kaiseki based on Japanese cuisine, but designed to be eaten with a knife and fork—creative, generously using local ingredients, and truly delicious. It’s the kind of Hotel you’d want to stay at just for the food. The staff were kind and the hospitality was excellent. However, the amenities and Facility were somewhat underwhelming. Apparently it was originally built as a corporate museum, and the high ceilings right after entering, the spaciousness, and the open lobby without partitions feel more like a hall than a Hotel. That said, it was nice how they made use of that space by displaying large artworks on the walls as well as across floors and up to the ceiling. There is no large public bath; only a mixed-gender spa where you enter wearing swimwear, so it didn’t feel like I could properly enjoy an Onsen. Ideally, I would have been happy if there were both a spa and a large public bath. The amenities are cutely packaged in boxes, but inside they’re disposable items from brands typically used by large-scale hotels—not something I found appealing. I feel bad complaining this much since we stayed at an exceptional 50% off special opening rate; however, if we had paid the original price of over 100,000 yen per night, my overall satisfaction might have been lower. Personally, this dissatisfaction would be resolved simply by having either a large public bath or an in-Room Onsen bath. Since there is currently only one suite with an in-Room Onsen bath type available, I hope they will add more Rooms of that type.
