  It was a delicious and wonderful stay.

  The lobster was incredibly delicious—I was genuinely surprised. I treated myself a bit by staying here, and many guests seemed to be regulars; the overall atmosphere was wonderful. I also appreciated being able to request Shuttle Service from/to Hakuba Station. This may have been just me missing it, but I would have appreciated it even more if makeup remover had been available in the Room or in the private bath.

Troimerei was personally designed by us 47 years ago at the foot of the Northern Alps—scenery unlike anywhere else in Japan—with the hope that you would enjoy an extraordinary escape, as if you had wandered into an old European monastery or castle. Regarding the lobster that you kindly praised: we air-ship live lobster in a hibernation-like state in 0°C seawater. We take great care to prepare it in a way that highlights its firm, plump texture—unique to live lobster—while avoiding any of the odor sometimes associated with shellfish. In France, Brittany—the home region of our chef—is considered one of the finest places for lobster. Our French chef, who also has experience at a two-Michelin-star restaurant in the UK, prepares it using authentic techniques from his homeland. Before our current French chef joined us, we asked Japanese chefs to train in France and also welcomed Chef Patrick Paugès (late), owner-chef of “Chantoiseau,” a one-Michelin-star restaurant in southern France, all the way from France to Hakuba. Here we have carefully preserved and further developed his precious culinary tradition—one that has since been discontinued in his home country. Our current chef carries on this legacy while refining it every day with his delicate sensibility. In fact, after winning a silver prize at a dessert competition in the UK, our current French chef has also presented sweets to Queen Elizabeth and collaborated with renowned chefs in France. This year marks our 45th anniversary. With gratitude for both the talents nurtured by France’s long culinary history and for every encounter with our guests, we will continue doing our very best together with our staff members who have worked with us faithfully for 30 or 40 years—and will continue to do so far into the future.   No matter how many times I visit, it’s always wonderful.

  It was our first stay in two years. We thoroughly enjoyed the wonderful cuisine. The live piano performance was also excellent. This Accommodation leaves us feeling recharged and ready to do our best for the year ahead.

Although we are not very knowledgeable about music, our dear friend Mr. Satoaki Kishimoto kindly offers to perform piano during the year-end and New Year holidays. Before COVID, he drew crowds of over 700 guests on two consecutive days at the Tokyo Metropolitan Theatre, and the following year welcomed more than 1,500 guests at Tokyo International Forum—he is a Tokyo-based chanson singer. Your generous words—“An Accommodation that gives me renewed energy to do my best this year…”—truly moved us. We are also deeply humbled by the exceptionally high scores in each category. As this greatly influences Troimerei’s rating within IKYU, we would like to express our sincere gratitude once again. Troimerei was founded with the hope that you could enjoy an extraordinary stay—without a long flight of more than ten hours to France or the burden of jet lag—just a few hours from the city, at the foot of Hakuba, whose scenery evokes the European Alps. We aim to offer an escape from everyday bustle, as if you had wandered into an old European monastery or castle. We also hope you will enjoy authentic French cuisine that even French guests would approve of, in our elegant restaurant loved by Europeans. Thanks to your support, we are honored to celebrate our 45th anniversary this year. Regarding our French dinner course that you mentioned: since our opening, we have repeatedly sent young and dedicated Japanese chefs to Michelin-starred restaurants in France for training before appointing them as Troimerei’s head chef upon their return. Here in Hakuba, we have long been committed to preserving true French culinary tradition. We also invited those who supported us at that time—including owner-chef Mr. Patrick Paugès (late) of “Chantoiseau,” a one-star restaurant in southern France—to Hakuba as part of our pursuit of recreating authentic French cuisine here over many decades. That long-held dream has now come true: today, our French chef—trained at two-Michelin-star restaurants in the UK—devotes himself entirely to preparing dinner for our guests from morning onward (skipping lunch service). Our course includes four daily hors d’oeuvres; a choice of fish from two dishes; a choice of meat from three dishes; two desserts; and coffee.   I've always wanted to stay here.

  I first saw this place in Hakuba and was struck by how beautiful it looked, thinking I’d love to stay here someday. Finally, I had the chance to visit. From the entrance to the rooms and hallways, it felt so European that I wondered if this was really Japan—it’s such a lovely Hotel. The poêlé filet mignon at dinner was absolutely delightful. It was incredibly delicious!

TROIMELAI was designed 46 years ago with the hope of offering a unique escape from busy city life—transporting guests domestically to a setting reminiscent of the European Alps at the foot of Hakuba Mountain without enduring long flights or jet lag. When I shared my vision of creating an old European monastery or castle-like atmosphere during construction, some smiled wryly at building something intentionally aged despite it being new construction. My initial design concept imagined this building as an old monastery or castle near a forest in Europe that had been purchased by affluent owners and renovated multiple times into guest rooms, a waiting bar, and an elegant dining area for hosting friends. As for dinner—which you kindly mentioned—we have strived since our founding to offer authentic French cuisine that even native French diners would appreciate. To achieve this, we sent several Japanese chefs to train at Michelin-starred restaurants in France and invited grand chefs from one-star establishments directly to Hakuba over many years of dedicated effort. Currently, our French chef with experience at two Michelin-starred restaurants in England devotes his full attention exclusively to preparing your evening meals instead of lunch service. Moving forward, we will continue striving earnestly toward creating delicious fusions using seasonal ingredients from Shinshu alongside high-quality ingredients air-shipped directly from France.   Heartwarming Hospitality

  It was my first time, and I stayed for a Multiple Night Stay. I was thoroughly satisfied with the delicious French cuisine, carefully prepared, and the warm hospitality of the owner and staff. I enjoyed a relaxing time at this petite Hotel nestled in the forest. During dinner, the sommelier selected wine based on my preferences, allowing me to enjoy it with peace of mind. I found this service to be far superior to recent trends like pairing ○○ cuisine with wine for ○ yen. For breakfast, as it was slightly chilly, I enjoyed a leisurely meal in my Room while admiring the view of trees from the second floor. The owner's stories about "Träumerei" were delightful and showed how much they value service and people. Although it's a bit far away, I'd love to visit again in another season!

  Delicious meals

  Lobster, red wine–braised Wagyu beef cheeks, freshly baked bread, and more—everything was absolutely delicious. Surrounded by lush greenery, we enjoyed a wonderful time with the uniquely designed building and the Onsen, creating a truly special atmosphere. Our after-dinner conversation with the owner—who said, “This building is a story”—was also delightful and left a lasting impression. I’m sure we’ll visit again for that meal. Thank you very much.

Over the years, we have steadily built on this vision by sending several chefs to train at Michelin-starred restaurants in France, and by inviting the late Mr. Patrick Bargès—owner and head chef of the one-star restaurant “Chantoiseau” in southern France—to Hakuba.\n\nAt that time, we had been airlifting most of our ingredients from France whenever possible. Just before returning home, Mr. Bargès praised our work, saying, “You are doing wonderful work; if this were in France, you could aim for a Michelin star.” He then reminded us that “French cuisine has another important mission: discovering and developing local ingredients,” and left those words strongly with us. Since then, we have also embraced local ingredients more proactively—including Japanese wagyu.\n\nWe were delighted to hear that you enjoyed the wagyu dishes and live lobster. Many returning guests visit specifically for these dishes, so we do our best to keep them available whenever possible.\n\nFor breakfast as well, we begin baking croissants and Danish pastries made with imported cultured butter from France 20 minutes before your requested time, then deliver them fresh either via room service or to the front garden. Even in France itself, there are surprisingly few chances to enjoy croissants or Danish pastries straight from the oven; if we may say so ourselves, they are a rare treat—hot and perfectly crisp.\n\nThank you also for joining our small after-dinner wine gathering.   Silence and Gourmet Delights

  It was my first visit, and I had a wonderfully unique and satisfying three days. A building reminiscent of a fairytale German house nestled in the pine forest. The reception staff were very polite and welcoming. The authentic pudding and herbal tea were absolutely delicious, raising my expectations as I headed to the room. However, the steep narrow stairs—hmm, a bit challenging for elderly guests. The atmosphere reminded me of an English manor house where I once stayed for several days, and the view from the room's window was just like the Lake District. Surrounded by tranquility and soft green hues of nature, it was a peaceful time that soothed my soul. I thoroughly enjoyed the private Onsen as well! The auberge lived up to its reputation with a luxurious meal centered around lobster on our first night—it was so delicious that we chose lobster again for our second night’s dinner, which turned out to be an excellent decision! Breakfast in the pine forest included freshly baked croissants accompanied by cool breezes—a perfect start to each day. Thank you for providing such serene moments filled with richness and flavor. My heartfelt gratitude goes out to all your staff members!

Despite some skepticism from builders at the time about making a new construction look aged, we pursued this concept wholeheartedly. The design even includes details such as slightly angled positioning to mimic how buildings might shift over unpaved roads over time. The interior tells its own story: originally imagined as an old monastery or castle near a forest in Europe that was later purchased by wealthy Europeans and renovated multiple times to include guest rooms for visiting friends, a waiting bar, and an elegant dining area perfect for dressing up. We were delighted to read your kind words likening our establishment to an English manor house. Regarding dinner—since our founding days—we have strived to offer authentic French cuisine that even French nationals would approve of. To achieve this standard, several Japanese chefs trained at Michelin-starred restaurants in France under renowned chefs who have also visited us here in Hakuba. The term "auberge" has become quite familiar recently, but as I mentioned in a previous reply, when we first opened 45 years ago, this word did not exist in Japan. Five years later, an accommodation calling itself an auberge was established in Hakone, and 22 years after that, the Japan Auberge Association was founded with a small number of members. There is even a rumor internally that Traumerei might be the oldest existing auberge! In fact, we were invited directly by founding members of the association to join as part of its first generation at its inception. Hearing guests like yourself use "auberge" so naturally now fills us with deep emotion as we reflect on over four decades of history. Thank you also for playing "Traumerei" on piano after dinner—it was truly wonderful! None of our team members at Traumerei can play piano themselves; thus, unless visiting musician friends perform during their visits here, it’s rare for us to hear live music from this instrument. The restaurant staff and other regular guests were captivated by your performance. During construction planning stages long ago—we ensured space would accommodate placing such grand semicircular pianos—but only several years later through generous connections within Tokyo could one finally grace this spot where today stands cherished memories tied closely alongside said instrument itself!   Dreamy Traumerei

  Auberge Traumerei, a place I had always dreamed of visiting since my student days. This time, I entered Hakuba via Norikura Highlands and Shirahone Onsen. Opening the doors of the Western-style building and stepping into the lobby felt nostalgic, like returning to my childhood home. Perhaps it was the furniture and vintage speakers that evoked such feelings. Back in the 90s, I often visited Omirador in Hakone for lunch. Though Omirador is now closed, Traumerei reminded me of its charm as well as that of the now-defunct Kiyosato Hotel. Celebrating its 45th anniversary, Traumerei is impressively well-maintained. The renovated water facilities in the room made for a very comfortable stay. The classical ambiance with antique furnishings and lamps enhanced both my room and the entire hotel’s atmosphere. The amenities and pajamas were highly satisfying. The private bath featured Katakuri Onsen's soft water quality—astonishingly designed back in the 80s! As for dinner—the highlight—before entering the restaurant, there was a bar counter reminiscent of those often seen overseas to welcome guests. Although I didn’t have any this time, next time I'd love to enjoy an aperitif before dining. Dinner lived up to all its rave reviews: summer-exclusive chilled consommé soup with lobster was so exquisite it left me speechless; duck sauté sauce offered fresh surprises beyond anything I'd experienced before; lobster stew, braised beef dishes—all exceptional—and desserts were beautifully presented. Breakfast croissants and chocolate danishes were freshly baked with delightful crispiness—a perfect match with café au lait that evoked mornings on Parisian streets. Though Hakuba’s townscape has changed significantly over 45 years compared to today’s environment, considering enjoying a full French course meal here instead of in urban areas makes it incredibly cost-effective too! From service excellence using Christofle cutlery & Riedel glassware (including stunning tall glasses paired perfectly when we enjoyed Burgundy wine), everything exceeded expectations thanks largely due not only passionate ownership but also dedicated veteran staff members supporting Traumerei throughout years ensuring unforgettable experiences altogether! I left feeling deeply grateful heading towards Happo Pond while already looking forward eagerly revisiting someday soon again someday soon again someday soon again someday soon again someday

About 46 years ago, I began studying design late at night while working as a helper at a nearby pension. This was the prologue to Traumerei's birth—a humble beginning. With no background in design or overseas experience and nothing but dreams to guide me, I repeatedly redrew plans based on fleeting visions that came and went. Over these 46 years, pursuing an ideal without precedent has led me through architecture projects, numerous renovations and expansions, designing furniture with craftsmen who serve royalty, organizing trips for chefs to Michelin-starred restaurants in France for training purposes—thanks also to a French Grand Chef who supported us during that time—and much more. Our efforts bore fruit over time; about 15 years after opening our doors with domestic tableware only initially available back then gradually replaced by Christofle silverware & Riedel glasses alongside authentic French cuisine paired perfectly alongside fine wines sourced globally today! Six years ago marked another milestone when joining hands collaboratively together became possible between myself personally partnering closely alongside former two-star Michelin chef hailing originally from Oxford England (runner-up British Sweets Competition winner presenting desserts directly before Queen Elizabeth herself).   Accommodation to Enjoy an Extraordinary Experience

  Thank you for the shuttle service to Hakuba Station and for accommodating my son, who does not like chocolate. We visited primarily for the lobster, and the dinner was more than plentiful—a flawless French cuisine experience. The atmosphere of the room, breakfast in the front garden, and overall ambiance allowed us to enjoy an extraordinary stay. However, moving to the room and private bath required using stairs, and while stairs were manageable, the deep bathtub without handrails made it difficult for elderly guests with mobility issues. This accommodation seems more suited for younger guests or middle-aged visitors.

Troymerai was designed and built 45 years ago to offer a unique escape, reminiscent of an old European monastery or castle, nestled at the foot of the Northern Alps with its extraordinary scenery. Since its establishment in 1981, we have continuously evolved to meet guests' needs. About 20 years ago, upon recommendation from travel site representatives, we added two private open-air baths and renovated them while maintaining their original design in spring two years ago. A stream fed by melted snow from the Northern Alps flows nearby, where wild trout swim upstream in autumn. A small deck over the stream is equipped with a table set for your enjoyment. The two Southern France-style private open-air baths are made using abundant European materials like marble and are equipped with steps submerged in water and handrails on walls to assist elderly guests. Upon receiving your feedback regarding this matter, I consulted our staff member who has been working here for over 30 years. Based on observing your lively meal shared with your son during your stay, they mistakenly assumed that such assistance was unnecessary. We sincerely apologize for any inconvenience caused by this oversight. Please let us know at the front desk during your next visit so we can make appropriate arrangements. Regarding dinner mentioned in your feedback: it is currently prepared by a French chef who has maintained a two-star restaurant in Oxfordshire for 29 years before joining us here full-time—dedicating his mornings solely towards crafting exquisite dinners using organic vegetables grown personally within adjacent gardens alongside seasonal Shinshu ingredients combined harmoniously alongside premium air-flown French produce ensuring utmost quality fusion cuisine experience awaits every guest dining under care provided henceforth onwards always striving forward earnestly toward excellence further ahead altogether altogether togetherness forevermore!   Always a satisfying meal!

  I visited to enjoy lobster and Hokkaido wheat bread after a long time. The meal started with four appetizers, and the green asparagus soup was exceptional. The dessert portions were quite generous, and I regret not being able to finish them. Overall, it was a satisfying dinner. The next morning, I woke up early for a walk. The air was fresh and clean, unlike Tokyo, which felt refreshing. The freshly baked croissants at breakfast were also delightful. Next time, I plan to revisit along with trying the delicious soba restaurant recommended by the manager!

Designed 45 years ago to evoke the feeling of wandering into an old European monastery or castle, we also offer authentic French cuisine that even French guests would approve of. Our dinner menu is crafted by a French chef from a two-star restaurant in England who dedicates his mornings entirely to preparation. The bread served is inspired by his hometown in Brittany and baked using organic wheat from Hokkaido. Our live lobsters are air-transported in seawater at 0°C to maintain their plump texture without any loss in quality or flavor. These lobsters are prepared using traditional techniques from Brittany, known as one of the best regions for lobster dishes. Signature dishes like "Lobster Cuisine" and "Braised Wagyu Beef Cheek," which emphasize both ingredient quality and cooking methods, have become favorites among our regular guests. We strive to ensure these options are always available. For breakfast, we follow authentic French advice with freshly baked croissants and Danish pastries made with imported fermented butter from France. These are placed in the oven about 20 minutes before your desired time so they can be enjoyed hot and crispy via room service or outdoors on our refreshing garden terrace during pleasant seasons—a rare treat even in France. Moving forward, we will continue striving for a harmonious blend of seasonal Shinshu ingredients with high-quality imported French products while maintaining sincere efforts toward excellence. This was designed and built over 40 years ago. Since a few years after Troimelai's establishment in 1981, many auberges in places like Izu have had private rock bath open-air baths. Following the recommendation of a travel site representative, we added two private Onsen about 20 years ago and renovated them this spring while keeping the original design. A stream of melted snow from the Northern Alps flows beside the bath, and in autumn, wild char naturally swim upstream. A small deck over the stream is equipped with a small table set. These two private open-air Onsen, designed in a Southern French style using plenty of European materials like marble, initially took about six months to design due to the lack of a clear image of French private open-air baths. The dinner you mentioned is currently prepared by a French chef from the two-star French restaurant Le Manoir aux Quat'Saisons in Oxford, UK, who has been there for 30 years. He has declined lunch service to focus on preparing your dinner from the morning, while also guiding young Japanese cooks and cultivating organic vegetables in the adjacent garden. We will continue to strive for a delicious fusion, a marriage of the rich seasonal ingredients of Shinshu and high-quality ingredients from France, which are airlifted.   The food is excellent.

  The location is Hakuba, and I enjoyed the unique auberge service of having breakfast while engaging with nature. The meals were excellent. The lobster for dinner is optional, but it's worth trying as a specialty dish. What you expect from your stay may vary from person to person, but for me, it exceeded my expectations. I heard that there are many repeat guests, and I can understand why.
