For dinner, the main course is a shabu-shabu tasting featuring Niigata’s prized brand wagyu “Agano Himegyu” and Tokamachi’s local specialty pork “Tsumaari Pork.” Savor Agano Himegyu for its smooth texture and rich lean-meat flavor, and Tsumaari Pork for its tenderness and deep umami—lightly swished in hot broth with seasonal local vegetables.
