An Accommodation Striving for Perfection
I was impressed by the staff’s drive to improve. I was especially amazed by the chef’s thorough attention to detail—even down to the choice of serving dishes. I was also struck by the president’s wonderful spirit when I previously stayed at Takinami, and it’s simply incredible that an even more upgraded Accommodation has been created. The ultimate auberge, packed with countless wonderful experiences in a single night.
Chef Harada presents a meticulously crafted series of gourmet dishes with seamless precision. Italian in style, they incorporate Yamagata’s seasonal ingredients and food culture, offering a true farm-to-table experience. Drinks feature an outstanding selection by an excellent sommelier (not limited to Italian). Luxurious Rooms are furnished with the finest locally made furniture from the prefecture. Welcome champagne and warm staff hospitality. Activities to enjoy breathtaking views. And, to top it off, a private Onsen renowned for its exceptional water quality. All of these extraordinary experiences were condensed into one night and two days, making for an unforgettable weekend getaway.

Every meal is full of delightful surprises.
This is my third stay, and the Michelin-starred chef’s Italian cuisine surprises me every time with a different menu. It’s rare to find Italian food this outstanding even in Tokyo. Conversations with the staff are also enjoyable, making for a wonderful dinner time. Breakfast is equally exceptional, featuring local rice such as “Yumegokochi.” The Room is spacious, and Netflix is available without limits. The Onsen water quality is superb in both the private bath and the in-Room bath—an auberge with no flaws. I’m already looking forward to my next stay.

It was excellent.
I came to Yamagata for the first time because I wanted to stay here. Since it’s in the middle of town, I wasn’t sure what to expect—but once inside, it felt like a different world. It was quiet and relaxing, with a real sense of nature. The Room was wonderful—so spacious that it almost felt too big for two people—but we could truly unwind as if we were staying at a private villa. The Onsen water quality was also excellent and incredibly soothing. Above all, dinner was absolutely delicious and genuinely moving. Of course the chef’s skill is outstanding, but it also reminded me just how rich Yamagata’s food culture is. Because dinner is served at the counter in small numbers, it was great to hear directly from the chef, and it left a very positive impression to see how kind and close-knit the staff were. It was such an enjoyable dinner. I was a little surprised when the president came around to greet us. I also heard that at Takinami next door he makes soba every day for dinner—I’d love to try that someday as well. What a wonderful person. Although this is a luxury Accommodation, it also feels warm and welcoming—an extremely comfortable place to stay. I’d love to visit again in another season someday.

It felt overpriced.
As this is an auberge limited to three parties per day, I expected attentive hospitality, but it did not align with my expectations. They follow the Satoyama Jujo approach, staging the stay as a product-experience opportunity. Considering the high Accommodation rate, being given product introductions at key moments felt off-putting. Dinner starts all at once, and while there are elaborate presentations when dishes are served, there is only one staff member who can explain the food, so explanations were sometimes missed. Since it’s an auberge, I wanted to focus on the meal—this was disappointing. Also, when I ordered the half pairing for 22,000 yen, two of the seven pours were the same sake as in the cheaper course; there was only one red wine; and the only particularly memorable wine was a 2019 Saint-Aubin—overall underwhelming for the price and somewhat overpriced. Finally, although I requested breakfast at 8:00, I was surprised to be handed a note that said 8:30. I didn’t notice until just before going to the dining room. The Room and hot spring quality were good and the food wasn’t bad, but it didn’t feel like truly top-tier service. At this price point, Hiramatsu feels like better value and easier to pay for with satisfaction. I hope they reconsider what an auberge should be.

I love Takinami, and...
I love Takinami, and I finally got to stay at this newly opened property. The Room, the private bath, and the tent in the courtyard were all amazing. The food was also very delicious, but dinner started at the same time for everyone, and I found the small “theater-style” experience—created together with other guests and the restaurant staff—a bit tiring. The service from the female staff member was truly excellent.

The luxury of enjoying freshly made, exceptionally delicious food
This trip to Yamagata was all about enjoying the meals and the Onsen. Every dish by Chef Harada was made with care, and his sincerity really came through. The staff seemed genuinely close, and that warmth made me feel especially comfortable. The Room was spacious and relaxing, and the Onsen—with its sulfur scent—left a lasting impression. It was such an appealing Accommodation that I booked my next Reservation on the day I checked out.

Enjoy local cuisine
Yamagataza was wonderful, so next we stayed at this sister property. The president even came to greet us and welcomed us back—it was clear that information had been shared, which was impressive. It turned out to be a fantastic auberge with a different kind of charm from Yamagataza. The food was truly delicious. The Onsen and the excellent meals were the best. The hospitality was warm here as well, just like at Yamagataza. The chef was friendly, and after we checked out, they waved goodbye as they saw us off. We will definitely return.

Snowy Yamagata: A Light to Mark Life’s Milestones
It was my third visit, and my first time here in winter. That morning, a weather warning had been issued in Kyoto. In freezing air we drove to Itami and boarded the first flight to Yamagata. The moment we broke through the snow clouds, I had a feeling this trip would be something special. A two-night, three-day Onsen getaway. But for us, the greatest pleasure is always the table at Sincereita. The deep, earthy aroma of Funagata mushrooms. The bold yet refined umami of Yonezawa beef. The clear, pure flavor of Nagai carp. And even Asiatic black bear—each dish carried a quiet reverence for taking life from the mountains. Few meals make you feel “local production for local consumption” so vividly. It was as if we were tasting not only the ingredients, but also the air and seasons of this place. And more than anything, what stayed with me was your hospitality. With our son’s next step in education approaching, we were given warm words of encouragement for his new journey. They were understated, yet deeply moving. Along with the lingering flavors of the meal, those words have become a treasured family memory. Snowy Yamagata, the warmth of Onsen waters, and the glow of Sincereita’s lights. On this third visit I became certain: this is not only a place to enjoy exceptional cuisine—it is a special place that stands beside you at life’s turning points. We will definitely return.

Both cuisine and Onsen are of the highest quality.
This was my second visit, and once again, it was an extremely satisfying stay. Dinner featured a course menu crafted by an Italian Michelin chef, skillfully utilizing local ingredients—each dish was a memorable masterpiece. The staff were excellent, making it enjoyable to converse during the meal. The Room's Onsen is fed directly from the source, offering exceptional water quality that warms you to the core. I am already looking forward to my next visit!

Akayu Onsen

The only Onsen Auberge
Nanyo City Akayu Onsen Auberge Cuisine, Onsen, Hospitality, Comfort Undoubtedly the No.1 outstanding accommodation. A long-established hospitality similar to Takinoha, Recipient of numerous awards including Michelin and Gault Millau. Enjoy Italian cuisine by Chef Harada at this onsen auberge. The local ingredients of the Okitama Basin and the warmth of dedicated people are unique to this place!

Exceptional Italian cuisine by a Michelin chef. The dishes, incorporating local ingredients with a touch of Japanese flair, are well worth the trip from Tokyo. The wine pairing was an excellent match. The Onsen features natural spring water, and we enjoyed three types: the semi-open-air bath in the room, the private open-air bath, and the large public bath adjacent to Takinami. The staff's professionalism was outstanding, and services like shuttle service to/from Akayu Station and welcome drinks were nearly perfect. This is an accommodation we would undoubtedly visit again.

An accommodation to enjoy all four seasons
As a returning guest, this is an exceptional accommodation with no flaws. Hospitality, cuisine, wine, hot spring quality, and concept—everything exceeds perfection. It was my first experience.
As an auberge, I wondered if I could finish all the dishes, and since the location was in the city, I worried about not being able to enjoy the scenery. After much deliberation, I decided to stay at this accommodation. Once you pass through the gate, it feels like entering another world. A variety of welcome drinks were prepared during check-in. The room was spacious and tidy when we were shown in. However, I did notice some dirt on the window glass that bothered me a little. The semi-open-air bath with natural hot spring water flowing directly from its source was absolutely fantastic. The cuisine was exceptional beyond words—carefully selected ingredients and thoughtful preparation made every dish delightful. It felt as though we were watching a wonderful dinner show led by the chef and supported by all staff members fulfilling their roles perfectly together as one team. It gave me a sense of dining at a high-end restaurant in Ginza rather than just having dinner at an accommodation facility; wearing casual room wear almost felt inappropriate for such an elegant experience! Since they knew about my small appetite beforehand, they kindly adjusted everything so that I could enjoy every bite until the end without feeling overwhelmed—thank you so much for your thoughtfulness! At checkout time too—they guided us around Takinami Falls (瀧波) before arranging transportation according to our train schedule which added convenience & comfort throughout departure moments seamlessly handled professionally yet warmly appreciated indeed!
