    The Ultimate Auberge

    We visited this wonderful place solely to enjoy the chef's cuisine and the perfect pairing wines. Although it is quite far from central Tokyo, it is absolutely worth the trip just to experience this exquisite French dining.

    Hidden retreat, excellent accommodation, and perfect dining.

    Driving along the unpaved road towards Lake Chimikeppu, the moment the lake came into view was breathtaking. Despite being located in such a tranquil area, the accommodation was impeccably clean in every corner of the room, with even pajamas thoughtfully provided, leaving no inconvenience. The meals were an astonishingly well-crafted French course. Lying on the hammock bed in the garden feels like being in paradise.

    It was disappointing.

    The cuisine was highly rated, so we made a Reservation here. The location is in the mountains with some rough roads, but we expected that. The architecture by the lakeside was beautiful. A staff member greeted us at the entrance, and although there were three dogs present, they were quiet and well-behaved—perhaps guard dogs or for bear deterrence? The interior was old but clean and well-maintained. The nightwear provided was from ELLE, which felt a bit amusing. As for the meal we had been looking forward to, it featured game meat in various dishes without any strong gamey smell; however, both aroma and flavor were very subtle to the point of being almost undetectable. For example, when they brought out venison roast smoked with straw in a Le Creuset pot to let us enjoy its scent—it was barely noticeable. While the meat's cooking temperature was perfect, it wasn’t to my taste so I left most of it uneaten. My mother even asked if she could skip breakfast altogether but ended up enjoying it fully as everything tasted good despite finding the green pea soup slightly thin in flavor. We do not plan on returning again.

    On the silent night of December 25th,

    I stayed on 12/25. Originally, it seemed there were many reservations, but for some reason, there was a cancellation, so it was just us staying. The hotel by the frozen Chimikappu Lake, slightly covered with snow and far from human habitation, was very picturesque. We thoroughly enjoyed a delicious dinner in the serene and quiet property. The menu cherished local ingredients. The dinner menu included: Vichyssoise, carrot jelly, fennel sable Scallops from Kushiro, turnip, cucumber, flan of Ezo abalone Mushrooms from Tokachi, lasagna Flounder from Tokoro, clam cream sauce from Akkeshi Mangalitsa pork thigh from Tokachi, mustard sauce Tsubetsu Wagyu beef, consommé, mushrooms from Hokkaido, cold noodles Almond bavarois, maple syrup from Bihoro Chocolate mousse, matcha sponge, pear sorbet Coffee, espresso, tea, herbal tea Everything was delicious. The room, without a TV, was refreshing and allowed us to relax. My companion said, "Next time, I want to come alone and relax," (laughs). By the way, the bath was not an onsen, so I rated it three stars, but it was a clean bath.

    The long-awaited Chimikeppu Hotel.

    I was soothed by the quiet location and Michelin one-star dinner at the Chimikeppu Hotel, which I had wanted to visit for a long time! It was a pity that I couldn't meet the chef after the meal. I also couldn't communicate with the hotel staff, which made me feel a bit lonely.

    This is a quiet lakeside auberge that you visit just to enjoy delicious cuisine. Listening to the chirping of small birds and the sound of woodpeckers while gazing at the wind-swept lake surface, you feel liberated from everyday thoughts, allowing both your mind and heart to relax. It was also fun to win over the three cute guard dogs. The bath and pajamas in the Room add a homely touch, which is charming. A unique day awaits you.

    The meals are the highlight, and as expected, they are delicate with a variety of flavors, living up to their reputation. However, the wine pairing is quite expensive at 10,000 yen per person, so the cost performance including drinks is somewhat lacking. Regarding aspects other than the meals, the building does feel old, and if you stay on the second floor, you have to carry heavy bags up and down the stairs. The location has a remote feel, as even the hotel acknowledges (this time, due to a typhoon, the return journey was in a storm with thick branches breaking and flying towards the car, which is a factor that cannot be denied when considering a revisit). Despite the difficulty in accessing the place, they generally do not allow consecutive night stays (yet I heard a famous celebrity stayed for a week on a private booking), which was a negative point. I stayed in the highest-grade room, a deluxe twin with separate living and bedroom areas, and while the living room had a nice view, it only had a heater and no air conditioning, making it unbearably hot. While it could be said that they haven't accounted for the recent rise in temperatures, the fact that the comforter was a thick winter one despite it being midsummer suggests that if they could review the non-meal aspects in light of changing conditions, a higher evaluation could be given.
