“Wine & Accommodation Chitose” was reborn in 2000 as an Onsen Accommodation where you can enjoy wine, following the renovation of the long-established Ryokan “Chitose Ryokan,” which has welcomed guests since the mid-Edo period. As the owner is a winemaker, our cellar houses 20,000 bottles—especially from France’s Burgundy region. Our cuisine features local ingredients from Tango whenever possible, highlighting their natural flavors while pairing beautifully with wine. We also pay close attention to every detail in each guest room’s furnishings, blending Japanese and Western styles, modern and retro elements to express owner Hirotaka Yamazaki’s unique vision.

The late author Hitoshi Yamaguchi also praised Shourotei in his book "Favorite Places," describing it as "completely flat and peaceful. That flatness seems to stretch endlessly.
