Maruto Soy Sauce, Nara Prefecture’s oldest soy sauce brewery, has been reborn as a stayable soy sauce brewery.Founded in 1689, Maruto Soy Sauce was once purveyor to the Imperial Household—so esteemed that members of the Imperial Family even stayed here. After the war, however, the brewery was forced to close when it could no longer secure satisfactory ingredients. The master of our property is a "Sake Sommelier," and the proprietress is both a "Vegetable Sommelier" and an "Onsen Sommelier." What is a "Sake Sommelier"? A professional in Japanese sake, often referred to as the 'Sommelier of Sake.' At Kakimotoya, we carefully select local sake from Nara, matching the season and the monthly Kaiseki menu, and offer them with a professional touch. What is a "Vegetable Sommelier"? An expert in selecting vegetables and fruits, understanding their nutrients, and determining the best cooking methods for each ingredient.
