Shop for fresh ingredients around Izu-Kogen Station, then slowly grill them over the lava irori hearth in the center of the living room. Fish cooked with far-infrared heat turns crisp on the outside and moist within. Meat becomes fragrant on the surface while keeping all its juices and flavor sealed inside. Take a bite while it’s piping hot, raise your glass, and grill some more—no schedule, just until you’ve had your fill. After dinner, warm yourself up with an Estonian-made sauna and Onsen. When your mind and body feel light again, gather around the irori once more. Shop, cook, and savor—the chef is you.
