Established in the 3rd year of the Meiji era. Generations of proprietors have personally wielded the knife, preparing dishes with the seasonal blessings of Hida's mountains and rivers and its native herbs. Enjoy a moment at Kabusuitei, with its three simple yet refined guest rooms in Hida Furukawa, surrounded by the gentle ripples of water.

  • Upon arrival, your son—nearly three years old now—welcomed us with a cheerful “Welcome.” His slightly shy expression was so adorable that it instantly brought a smile to our faces. Having known him since he was a baby, seeing him again each year is one of the reasons we keep coming back.This time we stayed in the Room “Hagoromo.” From the spacious veranda, we could lie back at night and gaze up at a sky full of stars. Spending time there in the pleasant evening breeze, pleasantly tipsy after dinner and drinks, felt like pure luxury.The cuisine was a summer herbal course. The mousse-like sauce made with herbal broth had a distinctive depth of flavor—I couldn’t resist asking for a spoon and enjoyed every last drop. The tomato simmered in herbal broth and served chilled also had more of a Western touch than before, making it an elegant and refreshing dish. The happy-hour herbal-syrup frappe was perfect for cooling down after our walk; it felt truly reviving.The morning coffee also tasted exceptional, so I asked about it and learned they use rare peaberry beans. Because only one bean develops instead of the usual two, the flavor is said to be more concentrated—and I was told the owner carefully roasts them from green beans himself. I was deeply impressed to see the same sincere dedication found in their herbal cuisine reflected in their coffee as well.Once again during our meal, the proprietress spoke with us warmly by our side. I started writing Reviews after last year’s visit, and looking back, I realized that Accommodations I rated highly always shared one thing: heartfelt hospitality with true attention to detail. This Accommodation embodies that better than anywhere else—and I feel that even more strongly now.

  • Our family of three stayed here. We were instantly soothed by the herbal (Menamomi) latte served on arrival—it had a gentle flavor and paired perfectly with the herbal sweets.The Room is a single-story layout with three rooms including the bedroom, and when you raise the blinds, a wonderful view of the Miyagawa River opens up before you. The garden plantings are also beautiful. The Facility is just right—everything you need, nothing excessive.The Accommodation itself does not have an Onsen, but we were able to make our own herbal bath salts and enjoy a wonderfully fragrant bath in our Room. It warmed us through and through. Even the amenities, such as lotion, are made with herbs—the concept is consistent throughout and very well done.And above all, the meals were outstanding. They accommodated our difficult dietary requests in great detail, allowing our whole family to truly enjoy mealtime. Of course, everything featured herbs throughout, and we were also delighted to have Hida beef. After dinner, they delivered a relaxing blend of herbal tea to our Room for us to drink before bed.For breakfast, the highlight was definitely the hōba miso—so aromatic that it made us want more rice.There were plenty of picture books that families with children will appreciate; after our child fell asleep, we parents enjoyed them too. The staff were also incredibly kind to our child, which made them very happy—thank you so much.Because only three groups can stay per day, we hardly ran into other guests at all. The staff maintained just the right level of attentiveness, and we felt truly refreshed.On a personal note, I couldn’t help but feel a sense of connection in many moments during our stay—this has become an Accommodation we will definitely return to. We look forward to visiting again soon.

Herbal cuisine differs from medicinal cuisine in that it uses naturally growing, edible herbs with medicinal properties. Cooking herbs in a "delicious" way was a challenge, but under the guidance of Mr. Kotaro Murakami (1945-2017), we have perfected herbal dishes where the herbs either take center stage or subtly enhance the flavors, all while preserving their unique taste and medicinal benefits.     Our signature herbal shaved ice is made by freezing herbal tea and shaving it fresh. As it’s shaved, the scent of plants and trees drifts through the air, bringing with it the mountain breeze of Hida.

    Choose from three types of herbal tea ice:

    • Kuromoji
    Pale pink ice made from concentrated kuromoji tea harvested in Hida. The moment it touches your tongue, a refreshing fragrance softly spreads.

    • Hida Megumi Tea + Butterfly Pea
    Blue ice made by adding butterfly pea to “Hida Megumi Tea,” a blend of nine locally grown herbs. A gently flavorful shaved tea ice.

    • Otome Tea + Gardenia
    Yellow ice made from a blend of toki (Japanese angelica), menamomi, and dandelion, finished with gardenia fruit. Recommended for those who want to fully enjoy the rich aroma of toki.

  • Seasonal Bedtime Tea: “Summer Coolness”

    A relaxing moment to unwind in your Room after dinner.
    This is Suisuitei’s bedtime drink, blended with Hida medicinal herbs.
    The crisp aroma of kuromoji and the refreshing coolness of mint gently ease the heat of a summer night,
    cooling and balancing your body as you drift into sleep.
