1963: Entered the culinary world. In 1969, traveled to Europe and trained in the Netherlands, Paris, and Nice before returning to Japan. 1973: Opened "Bistro de la Cité" in Nishi-Azabu, Tokyo, sparking a bistro boom. 1978: Opened "Restaurant Aux Ciseaux" in Roppongi, introducing authentic Nouvelle Cuisine. 1986: Established Japan's first auberge, "Auberge Au Mirador," overlooking Lake Ashi in Hakone. 1997: Added an annex, "Pavillon Mirador," featuring party dining facilities. 2004: Opened "Colonial Mirador," themed around Bali, realizing new culinary proposals in the form of Colonial French cuisine. 2007: Appointed as the chairman of the Japan Auberge Association upon its establishment. 2012: Received the Bronze Award in the "Cuisine Masters" recognition program. 2017: Promoted to the Silver Award in the "Cuisine Masters" recognition program. To this day, the establishment continues to receive high acclaim. For nearly 30 years, the chef has maintained a fulfilling lifestyle, traveling between the fields, ports, ranches, and the restaurant.
